For those waiting on my upcoming cookbook, Cooking with Salsa, here’s one of my recipes, just in time for summer.
You may have already mastered salsa making, or maybe you are newly interested in doing so. Salsa is one of the easiest things to make and it’s satisfying nutritional punch cannot be surpassed. Especially when you make it with avocados.
My signature spicy (or not so Spicey) avocado salsa is fab with chips as a dip, as a tasty garnish, or on a bed of lettuce as side-salad.
INGREDIENTS (YIELD ABOUT 3-CUPS)
3 medium semi-firm avocados, peeled and diced
1 large Roma tomato, seeded and diced small
2Â cloves fresh garlic, minced
1 sprig cilantro, finely chopped
½ large red onion diced small
Juice from 1 small lime
1 large jalapeno pepper, seeded and diced (more if desired)
¼ cup green onions, chopped
4Â tbsp. extra virgin olive oil
1 tsp. ground mixed pepper
Sea Salt (optional) to taste
1/2 tsp. Cayenne Pepper (optional)
DIRECTIONS
In a small dish mix garlic, cilantro, green onion, lime juice, salt, pepper, and olive oil. If you want spicier salsa, add the Cayenne Pepper. Set aside.
In a medium mixing combine avocado, tomato, jalapeno, and red onion. Gently mix ingredients. You want the avocado to remain diced. Drizzle in olive oil mixture while gently turning the ingredients to make sure everything is nicely coated.
Put in a dish for serving and enjoy with your favorite tortilla or vegetable chips.
